
I thought I’d upload my recipe for vegan scones, which were very popular with the Vegetarian Society! I’ll upload a photo tomorrow when I can use the card reader on the family computer, as I sadly forgot mine. I thought the scones were much tastier than non-vegan scones from a supermarket, so I was pretty happy!

225g self raising flour
50g vegan margarine
150ml soy milk
50g sugar
70g raisins
mixed spice to taste
Preheat the oven to 220C or Gas Mark 7.
Sift the flour into a bowl and add the margarine, rubbing it with your fingertips until it resembles fine breadcrumbs.
Add the sugar, raisins and mixed spice.
Add the soy milk gradually and mix to form a soft dough. You may not need to use all 150ml of the milk!
Turn out the dough onto a floured surface, and knead gently, then roll or press out to a thickness of about 1-2cm.
Cut the scones with a pastry cutter (or I guess you could use a glass if you don’t have a cutter!), and place them on a greased and lined baking tray.
Bake for 12-15 minutes, until the scones are light brown, and the edges spring back when pressed.
Then add jam and gorge yourself upon them!
